CHOCOLATE WEDDING CAKES

These are truly for the connoisseur of chocolate. This is chocolate sponge heaven with rum, which is filled with chocolate ganache. These cakes are either stacked one on top of each other or individually decorated.
There are many ways to decorate with chocolate, you may wish to have a smooth look chocolate covering, where the chocolate is tempered to the correct temperature and poured over the cake.
You may wish to have chocolate scrolls around the cake, or you may like the idea of sheets of chocolate around the cake.
White chocolate gives you that look of tradition, and when teamed up with colours look really amazing. Milk Chocolate for those who like to add a touch of colour to the cake and really dark chocolate for that mysterious result.

All chocolate cakes can be decorated with either fresh flowers, sugar paste flowers or fresh fruits, they all look truly stunning.

 

THE CROQUEMBOUCHE (The French Style Wedding Cake)

These cakes are made from many profiteroles which are filled with crème patisserie, chocolate ganache or cream. These are then placed on a board and stacked to form a huge cone shape. These cakes come in a variety of shapes and sizes (transportation permitting), and are usually finished by having spun sugar surrounding the whole cone.
Some designs can be made with the caramelised sugar for the tops of the cone, or chocolate shapes can be used for decorations.

Again there are a number of ways of decorating these cakes, some can stand up to three feet high. These really are amazingly different, and can also be used for desserts.

INDIVIDUAL FAIRY CAKES

This again is becoming increasing popular for the very reason that each guest takes a cake of their choice. These displays come in a variety of colours to match your colour scheme. Individual cakes in a variety of colours decorated with flowers , etc., then placed on a special cake stand which can stand three, four or five tiers high, and each tier decorated with a selection of fresh greenery and flowers for contrast. The total look is one of individuality, and makes for a wonderful centre piece.
